1/2 c old fashioned oats
1 3/4 c all purpose flour
1/2 t baking soda
1 t salt
1/4 t cinnamon
1 c butter, softened
3/4 c brown sugar, packed
3/4 c granulated sugar
1/2 t vanilla
1/2 t lemon juice
2 eggs
1 bag chocolate chips, semi-sweet
1/2 c walnuts, chopped
Grind oats in a food processor until fine (like flour). Combine with flour, baking soda, salt, and cinnamon in a medium bowl.
Cream together butter, sugars, vanilla, and lemon juice in another medium bowl with an electric mixer. Add eggs and mix until smooth. By hand, stir the dry mixture into the wet mixture until well blended. Add the chocolate chips and nuts to the dough and mix.
Put wax paper on a pan and measure out 1/4 c scoops of dough balls. It makes about 18 (leaving a little dough left to eat :). Chill in the refridgerator for overnight for best results or put in the freezer and then transfer to a ziploc once frozen.
Bake straight from the refrigerator/freezer on a pan, 2 inches apart, in a 300 degree oven for about 20-25 minutes or until they are lightly brown but still soft in the middle.
