Difficulty: Easy - for beginners
Serves: 8 servings
3c. Bow tie pasta
3-4 chicken breasts cut in bite size pieces
1-2t. lemon pepper
2T. olive oil
2 cloves of garlic
1/4 c. white wine
2 c. sour cream
1 T. fresh basil chopped (I add way more:))
1 lemon, zested and juiced
1/4c. grated parmesan
1/4c. grated mozzarella
1T. chopped fresh parsley
1/2 c. baby spinach leaves
1. Cook pasta.
2. Preheat oven to 375
3. Season chicken with lemon pepper. Melt butter and add olive oil in skillet. Cook chicken and when done put in the bottim of a deep casserole dish.
4. To the skillet add the garlic, white wine, sour cream, basil, lemon zest, and 1/2 of the lemon juice. Bring the mixture to a boil, stirring constantly. Add pasta and stir. Add pasta to chicken and mix. Cover with foil.
5. Bake about 15 min. Uncover, sprinkle with parmesan cheese, mozzarella, parsley, spinach, and drizzle with remaining lemon juice. Bake uncovered 10 minutes.
I always tweek recipes a bit and never follow them to a tee, so you can add more cheese, basil, or lemon. You also could use a different pasta like penne or something else. It's yummy and lemony!
