Salad of White Beans, Tomatoes and Greens

From Mark Bittman of the NY Times. All the kids loved this; will your kids eat raw spinach? Great with simply prepared chicken breasts; would also go well with pork, etc. You could toss in some cooked penne or ziti for a vegetarian meal.

1 15oz can white beans, drained
1 pt cherry or grape tomatoes, chopped
1 sm bag baby spinach, washed and spun dry
1-2 cloves garlic
2 T olive oil
a few sprigs fresh rosemary
dash of red pepper flakes
juice and zest of 1 lemon


Mix beans, chopped tomatoes and spinach. Lightly toast sliced garlic in olive oil with rosemary and red pepper flakes; remove after rosemary stops sizzling. Cool slightly, add lemon zest or juice or both, then pour over beans.
