Apple Pie / Pumpkin Pie Cookies

3/4 cup brown sugar
1 cup butter, softened
1 tsp vanilla
1 egg
2 3/4 cups flour
1 tsp apple pie spice or pumpkin pie spice

1 1/2 cups icing sugar
1/2 tsp apple pie spice or pumpkin pie spice
1 to 2 tbs apple juice or 1 to 2 tbs water for pumpkin cookies


1) In a large bowl, combine brown sugar, butter, vanilla and egg; beat until light and fluffy. Add flour and 1tsp apple or pumpkin pie spice; mix well. Divide dough in half; shape each half into flattened disk. Wrap each in plastic wrap; refrigerate about 1 hour for easier handling.

2) Heat oven to 350F. On lightly floured surface, roll half of dough at a timeto 12x6-inch rectangle. Keep remaining dough in the fridge. Cut dough rectangle lengthwise in half; cut each half into 1-inch-wide sticks. Place sticks 1/2 inch apart on ungreased cookie sheets.

3) Bake for 12 to 15 minutes or until edges are light golden brown. Immediately remove from cookie sheets. Cool 10 minutes or until completely cooled.

4) Meanwhile, in a small bowl, blend all glaze ingredients until smooth, adding enough apple juice/water for desired consistency. Spread glaze on tops of cookies. Let cookies stand until glaze is set before storing.

* In step 2, I used a cookie cutter instead of cutting it into strips. Either way is fine.
