1 tablespoon coconut oil
1 small red onion, cut into 1/4-inch dice
1/2 tsp ground allspice
3 cups fresh sweet corn
1 tablespoon minced fresh ginger
1 cup coconut milk
1 tsp raw cane sugar
ground black or white pepper
1. In a medium saute pan over low heat, combine coconut oil, onion, allspice and 1/8 tsp salt and saute, stirring often until caramelized, about 10 to 12 min.
2. Add corn and ginger, raise the heat to medium, and cook, stirring frequently until soft, about 5 min.
3. Reduce the heat to low, add the coconut milk and the sugar and simmer, stirring often, for 10 min.
4. Season with salt and pepper to taste.
