2 or 3 medium ripe tomatoes, washed, cored and cut into wedges
1/2 cup extra virgin olive oil
1.5 Tbs. red wine vinegar
1/2 large red onion sliced
2 garlic cloves
4-5 basil leaves, slivered
Salt to taste
1/4 tsp. dried oregano
To tomatoes, add remaining ingredients and toss to combine. You may also serve over slices of fresh mozzarella.
