1lb minced chicken
1/4 c fish sauce
4 garlic cloves, minced
4 shallots cloves, minced
4-6 thai chilli peppers, sliced
chicken stock or water
1/2 green bell pepper; 1/2 red bell pepper
1 cup basil leaves, rinsed


1. Marinate mince in fish sauce
2. Heat oil in a large pan, and fry garlic and shallots on med-hi
3. Add marinated minced chicken
4. If it looks dry, add some chicken broth or water
5. If you've added water, do a taste test here. Add dash of dark soy sauce if you find it too bland
6. Simmer utill the sauce is reduced
7. Add in bell peppers, fry for 1 min
8. Stir in basil; ready to serve
