Spaghetti Bolognaise ala my mum

Serves: 4


* 300-400g lean beef mince
* 1 tin peeled chopped tomatoes
* half cup beef stock
* half cup red wine
* tsp worchester sauce or 1 tsp tomato paste
* +- 100g mushrooms sliced
* 2-3 sticks fresh celery or 1 green pepper sliced
* 1 onion finely chopped
* 2 clove garlic crushed
* olive oil
* +- tbsp sugar (to taste)
* tbsp fresh chopped oregano or tsp dried oregano
* 3-4 dried bay leaves
* 400g spaghetti cooked
* Parmesan cheese
* Salt and pepper


1) Brown mince in a little oil and put to one side

2) In a large pot gently fry the onions, garlic and celery/green pepper in olive oil until softened

3) Turn the heat up a little and add the wine, simmer for 5mins or so, and add tinned tomatoes, beef stock, bay leaves and worchester sauce/tomato paste. Stir and allow to simmer a few minutes

4) Add browned mince and sugar, reduce heat and simmer gently for 15-20min (the flavour intensifies the longer you leave it) stirring occasionally

5) Add chopped mushrooms and oregano, cover and simmer for another 10mins
*tip: This is a good time to start cooking the pasta so that both will be ready at the same time

6) Add salt and pepper to taste, and serve with a sprinkling of grated/shaved parmesan cheese

* If the sauce is too liquid allow to simmer uncovered
* Grated carrot can also be used, add when frying the onions etc at the beginning
* For really tender mince soak in milk for 12 hrs beforehand
