Pork with apple onion andouille stuffing.

4 boneless pork cutlets
1 box of cornbread stuffing
¼ cup chopped of andouille sausage
½ cup chopped onion
½ cup jarred apples chopped


In a pan, add the sausage, apples and onion and cook until soft and caramelized. Set aside.
Prepare the stuffing as directed on the box, but when you are adding the stuffing to the water, add the sausage, apple and onion mixture too. Let it steam for 5 minutes (according to the directions on the box).

Heat the oven to 375
Season the pork with salt and pepper.
Drizzle a little olive oil in a 13x9 pan. Add the pork. Build up the stuffing on top of the pork cutlets (½ cup-1 cup depending on the size. Cook for 30-40 minutes until gbd.(golden brown delicious)
