Easy Santa Fe Chicken

2 tbsp. all-purpose flour
1 tbsp. chili powder
4 boneless, skinless chicken breast halves
2 tbsp. vegetable oil
1 large red or green pepper, cut in strips
1 can fiesta tomato or straight tomato soup.
1 cup corn niblets
1/4 cup shredded monterey Jack or cheddar cheese
4 cups hot cooked rice


1. Mix flour and chili powder. Coat chicken with flour mixture
2.Heat oil in large skillet over medium heat. Add chicken and cook until browned on both sides. Set chicken aside. Drain fat
3. Stir in mixture of ppers, soup, and corn heat to a boil. Return chicken to skillet. Reduce heat to low and simmer covered until chicken is cooked through.
4. Sprinkle with cheese, serve with rice.
