What a great way to serve leftover tofu or rice!

Serves: 6..1 cup servings

2 cups cooked rice
1 large oninon, sliced
1 green pepper, sliced
2 ribs celery, sliced
1/2 LB. tofu, diced
2 green onions, cut in 1/2 pieces
2-2 Tbsp.oil
2-1 Tbsp. soy sauce


Heat in a skillet or wok;
2 Tbsp.oil
Add and stir fry for 1 minute;
the tofu cubes
1 Tbsp. soy sauce
Remove tofu and stir fry 3-4 minutes;
2 Tbsp.oil
the onion slices
the green pepper slices
the celery slices
Crumble in;
the cooked rice
1 Tbsp. soy sauce
the cooked tofu cubes
Stir fry until hot.Serve sprinkled with;
the chopped green onions
