1 Tbsp. cooking oil
1 package ground turkey (16 to 20 oz)
1 onion, chopped
4 cloves garlic, minced
1 green bell pepper
2 20 oz. cans diced tomatoes
salt to taste (I add about 2 tsp.)
pepper to taste
To serve:
fresh basil, coarsely chopped
shredded Parmesan cheese
cooked pasta
1) Heat oil in a large pot and brown the turkey meat. Once the turkey is cooked, set it aside.
2) Add onions to the turkey drippings and saute for a minute until soft. Add the garlic and green peppers and cook for another couple of minutes. If the vegetables are sticking to the bottom of the pan, add a little more oil. Add turkey back to the pan and mix together.
3) Add the diced tomatoes and mix in. Bring to a boil and let simmer for about 20 minutes, stirring every 5 minutes or so. While the sauce is simmering, add salt and pepper as needed.
4) To serve, toss sauce with cooked pasta, basil, and parmesan cheese. Garnish with more basil and cheese.
Notes:
This recipe makes quite a bit, so make sure the pot you use is big enough (3 qts or larger). If you want variety, you can substitute beef or sausage for the turkey, or add extra veggies.
