What a great refreshing and healthy soup to eat on a hot summers day.

3 cups fresh tomatoes, peeled and chopped
1/2 LB. tofu, cut in small cubes
2 cups tomato juice
1 medium cucumber, seeded and chopped,
about 1 1/4 cups.
1/3 cup green pepper, minced
1/4 cup green onion, minced
1 Tbsp. fresh parsley, minced
1 Tbsp. fresh cilantro, minced
1 Tbsp. olive oil
1 tsp. Worcestershire sauce
1 Tbsp. red wine vinegar
1 tsp. salt
1/4 tsp. dried basil
1/4 tsp. dried oregano
1/8 tsp. black pepper
2 cloves of garlic, minced or to taste
Tabasco sauce to taste.


Combine all the ingredients in a bowl.Chill and serve.
