Spinach Gruyere Calzones

Difficulty: Easy - for beginners


10 oz pkg frozen, chopped spinach cooked according to pkg & drained well
1-1/2 c shredded Gruyere or Swiss cheese
1/2 c ricotta cheese
1 green onion, thinly sliced (2T) - I often omit
1/2 t dried, crushed basil
1/4 t garlic powder
1/4 t pepper
Pizza dough cut into 5" squares
1 egg
1 t water
1/4 c Parmesan cheese


Mix spinach, Gruyere, ricotta, onion, basil, garlic, and pepper. Place on dough. Brush edges with water. Lift one corner and stretch to opposite corner. Press edges of dough with fork to seal. Place on greased baking sheet. Prick with fork. Combine egg and water and brush over the dough. Sprinkle with Parmesan. Bake 425 for 10 minutes. Let stand 5 minutes.
