Dietary guidance: v
tablespoon of butter
small finely chopped onion
300g rice (short grain)
some left over white wine (about a cupful)
1 litre of stock
some grated cheese
salt and pepper
AND... ingredients! Mushrooms, peas.. whatever you fancy
Melt the butter. Fry the onion. Add the rice and cook for a few minutes. Add the wine and wait for it to evaporate.
Add the stock slowly... let the rice absorb it before you add more.
Keep stirring (this is why people don't make risotto because you have to supervise it)
Add ingredients like mushrooms or peas
Stir in the cheese and serve immediately. Don't wait around or it sort of sets and goes hard and no one wants that.
