8 medium-large potatoes

1/2 big onion
Start off by washing and boiling the potatoes, since they take the longest to cook (20 minutes in a pressure cooker).
Next, chop the half onion into small bits and sauté them in a pan without oil/fat until they become glassy, then add oil to it and continue sautéing them for a minute or two (preferably olive oil, since that is the healthiest).
In another pan, prepare the 8 eggs sunny side up. Sprinkle some salt and pepper on them.
When the potatoes are done boiling, peel them and mash them in with the onions. Add a bit more oil if you consider the potatoes to dry. Add salt according to your taste.
Separate the potatoes into 4 equal amounts and spread them on a plate each, making a "bed" out of them. Place 2 eggs on top of each bed.
Suggestion: when making the eggs sunny side up, do not let the egg yolk fully solidify. Then, eat the egg white first and then let the liquid part of the egg yolk flow over the potatoes like a sauce. It's really yummy...
