3 cups white rice (long grain or broken)
1/2 tsp salt
4 1/2 cups water
Put rice in a heavy-pan, run water on it, mix and pour off the water. Continue to rince in this way until the water is almost clear. Add 4 1/2 cups of water and salt. Put a lid on & cook on medium heat until it comes to a boil. Turn very low. Continue to boil for 15-30 minutes until all the water is absorbed and the rice no longer looks wet (it will start to make a slight crackling noise). Turn off the heat, put the lid back on & let the rice sit for 15-30 minutes. Fluff with a fork & serve.
Note: Start your rice BEFORE you start making whatever goes with it. The secret to good rice is not using too much water & letting it SIT for at least 15 mins after it's cooked.
