Lucy's Super Easy Eggplant

A delicious way to top your spaghetti, make a sandwich or a snack with fries. Easy to substitute zucchini into this recipe as well!

1 large eggplant
1 jar of mayo
1 packet of Shake N' Bake or your favourite flavoured bread crumbs


Slice your eggplant into 1/2 inch circles or long strips (your choice).

Smooth a thin layer of mayo over all sides.

Dip eggplant into breadcrumb mix, covering all sides.

Heat skillet at medium-high heat.

Place eggplant in skillet (no oil needed) and saute until golden (about 5 minutes). Flip and saute other side.

Serve over spaghetti (a la eggplant parmesan), on a sandwich with tomatoes, feta and basil or just eat as a healthy snack!
