Thai Red Curry Muscles

Red Curry Past....a couple spoon fulls
1 stalk Lemon Grass whole
1/4 cup White wine (optional)
2 cans coconut milk
3 tbsp fish sauce
1 whole lime juiced
1 pound fresh live muscles *Cleaned
1/4 cup fresh chopped cillantro
1/4 cup fresh chopped basil
3-4 tbsp of oil

one large pot with lid


heat your oil at a medium heat, and then add in your lemon grass whole...Sate for about 30 secs...add in your red curry paste and sate together for another 30 secs . Add in your white wine cook off the alcohol, 1 min or so....then add in your coconut milk whisk it all together and add in the fish sauce and lime juice. Simmer the ingredients together for about 1 min and add in your muscles.

Cover the pot and steam for a couple mins....muscles are done when they open up, it doesn't take very long so check after a couple mins, take off the lid and when you see them start to open stir them around.
When done be sure to take out any unopened muscles as they are not good to eat
Take out the lemon grass
add your fresh basil and cilantro to the top of the muscles and serve right away :)
