2 eggs - beaten
1/2 cup tomato juice
3/4 cup gluten-free breadcrumbs *recipe below this one
1 tablespoon oregano
1 clove of garlic - minced
2 tablespoons parsley flakes
1/4 teaspoon salt
1/4 teaspoon pepper
2 pounds ground beef
8 slices ham (I use prosciutto)
6 ounces mozzarella cheese (shredded would be 1 1/2 cup)
If you don't have the gluten free breadcrumbs, make them before the meatloaf.
Preheat oven to 350 degrees F. Blend the eggs, gf breadcrumbs, tomato juice, parsley, oregano, salt, pepper and ground beef. Once it is well blended spread it out on wax paper in a flat rectangle. Lay the ham slices in the middle, then add the cheese. Roll into a long loaf. Bake for 1 hour and 15 minutes.
Bread crumb recipe
Ingredient: 4 slices gluten free bread.
Toast the bread lightly and then cool slightly. Break bread into pieces and place in food processor or blender. Grind into small bits. Spread out in a shallow pan and toast in the oven until golden. Cool slightly before adding to the meat.
