Tunisian Chicken with Dried Fruit

1 chicken, skin removed
Salt and freshly ground pepper
2 tbs olive oil
1 onion, peeled, thinly sliced
1 tbs minced garlic
1 tbs cumin
1 tbs minced, fresh ginger
1 tbs cinnamon
1 tbs ground coriander
1 tsp paprika
1 tsp red pepper flakes
1 tsp salt
4 cups chicken stock
2 medium sweet potatoes, peeled, cubed
2 tbs lemon juice (1/2 a lemon)
¼ cup roughly chopped dried apricots
¼ cup dark raisins
¼ cup chopped, blanched almonds


Heat oven to 350
Remove skin of chicken
Sprinkle chicken w/ salt and pepper
In pan, heat oil, brown chicken – remove and put in roasting pan
Add onion slices to sauté pan, add garlic, add cumin, ginger, cinnamon, coriander, paprika, red pepper flakes, salt
Add stock, sweet potato, apricots, raisins, almonds, lemon juice
Bake 45 mins
