Sweet Baked Ricotta with Strawberry Sauce

75g caster sugar
3 tbsp marmalade
1 kg ricotta
rind of 1 orange
50ml brandy
1 tsp vanilla extract
4 eggs
35g plain flour

strawberry sauce:
75g caster sugar
80ml red wine
80ml orange juice
500g strawberries


Preheat oven to 170C.
Grease and flour an 18cm springform pan.

Process sugar and marmalade in food processor until smooth, then add ricotta, vanilla, orange rind, brandy & eggs and process until mixture is well combined.
Stir in flour.
Pour mixture into tin and bake for an hour at 170C.
(it will still be slightly wobbly in the centre). Turn the oven off and leave the baked ricotta in the oven, with the door ajar to cool.

Strawberry sauce:
Put sugar, red wine, orange juice in a pan on a medium heat. Warm until sugar has dissolved. Add sliced strawbs. Cook until berries are soft. Whizz the lot in a blender. Put back in pan and reduce until sauce coats the back of a spoon. Skim off any scum that rises to the surface.
Allow to cool a little before serving with cheesecake.
