200g - 250g freshest red tuna (you can also use salmon)
juice of half a lemon
one teaspoon capers
Coriander or basil leaves
drizzle of good quality olive oil
rock salt & freshly grinded peper
Keep the tuna nice and chilled in the fridge until you are ready to slice it.
With a sharp knife, slice the tuna into very thin pieces. Lie flat neatly on a white plate, drizzle with olive oil.
Destone the avocado & slice into little cubes
Chop the capers, slice the shallots finely
Sprinkle the capers, avocado & shallots over the tuna slices
Squeeze abit of lemon juice over the tuna
Grind salt & pepper over the tuna
Garnish with the fresh herbs ie coriander or basil leave.
