1 box of corn muffin mix
( the ingredients needed to prepare muffins regularly
-1/3 cup milk )
1 cup of sugar
1 small can of corn- processed in a processor
1 small can of green chilis diced
Greese a medium size caserol dish, and preheat oven to 350 degrees. Mix in a large bowl- muffin mix with egg and milk. Add in processed corn (should be a soupy consistancy), sugar and chilis diced very small. Bake on 350 for 20 minutes.
Serve with sour cream, salsa, or guacamole.
I often prepare as a side dish with a salad with black beans, strips of onion rings, and an avacado ranch. I've also serve this dish with bean burritos, cheese quesildillas, etc. It's always a big hit.
