sweet corn & tamale cake

This recipe is very similar to Cheesecake Factories "sweet corn tamale cakes," but you can make it right at home. It's inexpensive, delicious and a versitle side dish for any tex-mex meal.

Cooking time: 20 Minutes

1 box of corn muffin mix
( the ingredients needed to prepare muffins regularly
-1 egg
-1/3 cup milk )
1 cup of sugar
1 small can of corn- processed in a processor
1 small can of green chilis diced


Greese a medium size caserol dish, and preheat oven to 350 degrees. Mix in a large bowl- muffin mix with egg and milk. Add in processed corn (should be a soupy consistancy), sugar and chilis diced very small. Bake on 350 for 20 minutes.

Serve with sour cream, salsa, or guacamole.

I often prepare as a side dish with a salad with black beans, strips of onion rings, and an avacado ranch. I've also serve this dish with bean burritos, cheese quesildillas, etc. It's always a big hit.
