Applesauce Bran Loaf (or muffins)

This recipe is from a local grocery store flyer. Kids love it baked as mini muffins. Freezer friendly as well.

Preparation time: 15 mins
Cooking time: +40mins for loaf, approx 12 for mini muffins

Serves: makes 1 loaf or about 30-35 mini muffins

1 cup whole wheat flour
1/4 cup natural wheat bran
1/2 cup brown sugar
2t ground cinnamon
1t baking powder
1t baking soda
1 egg beaten
1 cup unsweetened applesauce
1/2 cup fat free plain yogurt
2T canola or safflower oil


-preheat oven to 375 degrees F, grease loaf or muffin pans with cooking spray.

-in large bowl, combine flour, bran, brown sugar, cinnamon, baking powder and baking soda. Mix well.

-in medium bowl, combine egg, applesauce, yogurt and oil.

-combine dry and wet ingredients, stir until just moist.

-for a loaf, bake for 35-40 mins or until tester inserted in centre comes out clean. Cool in pan on wire rack for 10 mins, then remove from pan to cool completely.

-for mini muffins, bake approximately 12 mins or until tester inserted in centre of a muffin comes out clean. Remove from pan, cool on wire rack.
