Dietary guidance: v
*4 cups cooked Radiatore (Nugget) Pasta
*2 cups Cucumber, chopped bite-size
*1 cup Red Bell Pepper, chopped bite-size
*1/2 cup Red Onion, sliced
*1/4 - 3/4 cup Black Olives, pitted and sliced
*1/4 cup Lemon Juice
*1/4 cup Olive Oil
*2 tbsp Greek Seasoning
*1/2 cup (or more) crumbled Feta Cheese
1. Mix olive oil, lemon juice, and Greek seasoning together. Set aside.
2. Mix all remaining ingredients together but for the Feta cheese. Combine with dressing and allow to refrigerate at least 1 hour to blend flavours. Sprinkle with cheese and serve.
*Use a mix of red, orange and yellow peppers for more color.
*4 cups cooked radiatore is approximately 3 cups of uncooked radiatore.
*Adjust amount of olives and cheese to your own preference.
*Sundried Tomato Feta cheese tastes perfect in this recipe.
