1 Large Leek
2 Large Tomatoes
About 150g cheese (sliced)
Butter for frying
1 sheet of Puff Pastry
A 10x10x1 inch dish for baking (any dish can be used, but this size gives good surface area for the tomato to cook.)
Heat the oven to 180C.
Chop the white 'stem' of the leek into rings and throw out the grenn 'stalk'. Melt the butter in a frypan and fry till translucent and soft.
Chop the tomato into slices about 1/3 inch thick (experiment till you find the thickness you like).
Grease the baking dish and put in the puff pastry. Prick the bottom with a fork.
Add the leek to the dish, then layer the cheese then layer the tomato on top. Bake for 20 minutes or until the top edges of the pastry are done.
Salt and and pepper to serve.
