Southwest Chicken Casserole

I really wanted something yummy with all these ingredients, so I just kinda made it up...It's kinda loose, but not totally soupie..

Preparation time: 15-30min
Cooking time: 30-45min

Serves: 5-7


6 Chicken Breasts cooked and cut into pieces
1 can Corn drained
1 can Black Beans drained
1 can tomatoes – diced and drained
2 boxes Mexican Style Rice – cooked
1 pkg Shredded Cheese
1 Green pepper - diced
1 Red pepper - diced
1 Onion – diced
1 can Cream of Ckn soup &
1 can water
1 tbsp. Chili powder
1.5 teaspoon Cumin

Serve with:
Wheat tortillas
Sour Cream


In a large bowl, combine Corn, Black Beans, Cooked Rice, Cream of Ckn Soup, Water, Chili Powder & Cumin. Set Aside. In greased Casserole dish, layer chicken, 1/2 of the cheese then top with all or 3/4 of the mixture. Sprinkle on diced peppers and onions. Sprinkle on remaining cheese. Top with diced tomatoes. Bake for 30-45min at 350°.
Serve with Sour cream and tortillas

*If more liquid is desired, can add desired amt. of chicken broth.
