vodka sauce

Your basic vodka sauce, done my way.

Dietary guidance: v 


2 cloves of garlic
1/2 cup olive oil
1/2 small vidalia onion
1/4 chopped basil
1 medium can of crushed tomatoes
1 cup of any vodka (even like Fleishmens)
1 small can of tomato paste
1 pint heavy cream
1 large can pealed whole tomatoes
Salt and peper to taste


On medium, simmer oil and garlic until fragrant. Add onions and cook until onions are translucent. Add medium size can of crushed tomatoes and then vodka. Cover for a 2 hours. Add tomato paste to sauce and stir. Add basil and then slowly pour in heavy cream while continuing to stir the sauce. Add the large can of pealed tomatoes. Cook uncovered on low for another hour.
