Fireman's Banana Nut Muffins

2 1/2 c. flour
3/4 c. sugar
1 1/2 tsp. baking soda
1/2 tsp. salt
2 large eggs at room temperature
1 1/2 c. buttermilk
1 1/2 c. bran flakes
3 ripe bananas, mashed
1/2 c. chopped walnuts


Preheat oven to 350 degrees. Coat a 12-cup muffin pan with non-stick spray. Sift the flour, sugar, baking soda, and salt together and set aside. Whisk the eggs, buttermilk, and bran flakes togther and let stand for 10 minutes. Make a well in the center of the dry ingredients and add the egg mixture all at once. Stir with a wooden spoon until the dry ingredients are just moistened. Fold in the mashed bananas, taking care to keep the mixing to a minimum; some lumps are fine. Fill the muffin tins two-thirds full. Bake in the prepared muffin tin for about 25-30 minutes. The muffins are done when a fork inserted in the center of the muffins comes out clean.
