Blueberry Pie

I don't like blueberry pie, but I'm just one person lol.

Cooking time: 50 min

Serves: 6-8

¾ cup white sugar
3 tbsp cornstarch
¼ tsp salt
½ tsp salt
4 cups fresh wild blueberries
1 tbsp butter

2 cups all-purpose flour
¾ tsp salt
2/3 cup shortening
6 tbsp cold water


1) Preheat oven to 425º F
2) Mix sugar, cornstarch, salt, and cinnamon. Sprinkle over blueberries in a large bowl. This is the pie filling.
3) In another bowl, combine flour and salt. Cut in shortening until crumbly. Gradually add water, tossing with a fork until dough forms a ball. Divide dough in half so one ball is slightly larger than the other.
4) Roll out the larger ball to fit a 9-10 inch pie plate. Transfer pastry to pie plate. Trim pastry with even edges. Pour blueberry filling into the crust.
5) Roll out second ball, cut slits in pastry. Position over filling. Trim pastry to one inch beyond edge of pie plate. Fold top crust over bottom crust.
6) Bake on lower rack of oven for about 50 minutes, or until crust is golden brown.
