Meriwether's Creamy Grits

Ingredients

2 1/2 c. 2% milk
2 1/2 c. water
1 c. uncooked grits
1/2 tsp. salt
1/4 c. margarine
1 c. shredded sharp cheddar
1/2 c. grated Parmesan
1/8 tsp. white pepper
1/8 tsp. cayenne
1/8 tsp. nutmeg

Method

Combine the milk and water in a large saucepan. Bring the mixture to a boil. Stir in the grits gradually. Reduce heat. Cook for about 20 minutes or until thick and creamy, stirring frequently and adding small amounts of water or milk as neccesary to maintain the creamy consistency. Add the salt, margarine, cheddar, and Parmesan and stir until all are melted and well blended with the grits. Add the white pepper, cayenne, and nutmeg and mix well.
