Caramel Popcorn

4-8 liters popped popcorn (If you want kernels to be well coated, use 4 L)
1 cup margarine
2 cups brown sugar
1/2 cup corn syrup
1/4 tsp. cream of tartar
pinch of salt
1 tsp. vanilla
1/2 tsp. baking soda


Bring all ingredients except popcorn, soda and vanilla to a boil. Boil for 5 minutes. Remove from heat. Add vanilla and soda and beat down. Pour over popcorn and stir to coat. Place on baking sheet or roaster. Bake at 200 degrees for one hour (it works okay if baked for less time). Stir occassionally while cooling to prevent sticking.

Optional: Almonds, pecans, peanuts may also be added.
