Dill Gazpacho

This is my variation on a recipe I found on allrecipies. This is one of my favorite healthy summertime foods. Really filling, really healthy, and really good. The one downside to this meal is the preparation time. with at least and hour to chop and mince,

6 medium ripe tomatoes, finely chopped
3 cucumbers, peeled and finely chopped
3 onions finely chopped
3 green bell peppers, finely chopped
1 or 1 and 1/2 Jalapeno pepper minced (depending on how spicy you like it, I tend to go on the safe side)
1 and 1/2 lemons juiced
3 teaspoon balsamic vinegar
2 and 1/4 teaspoon olive oil
1/4 teaspoon salt
1/8 teaspoon ground black pepper
3 tablespoon chopped fresh dill


1. Mix all the ingredients into large bowl
2. Stir throughly
3. Take half the bowl and puree in a food processor
4. Pour the puree into large bowl, add dill and still till evenly mix
5. Place in freezer for least and half hour maybe hour before serving.
