Little muffins great for taking for breakfast when you're short on time in the morning or just as a healthy snack any time. This is a huge recipe so you can either spend a long time baking them all at once or you can freeze the batter and thaw it out the

3 cups whole wheat flour
2 cups unbleached white flour
5 tsp baking soda
1 tblsp salt
1 1/2 cups brown sugar
3 cups natural bran
1 cup raisins
2 cups chopped dates
2 eggs
1 cup applesauce
1/4 cup of molasses
1 litre of buttermilk
1 1/2 cup of water


1. In a very very large bowl mix all the dry ingredients.

2. In a second large bowl add the wet ingredents and stir well.

3. Add the went ingredients to the dry ingredients and mix until well-blended.

4. Refrigerate over-night (this helps the batter thicken up so you can pour it into baking cups better!).

5. Pour into greased baking cup sheets or lined with paper cups and bake for approximately 25 mins--or until the top of the muffin springs back into place when you press it lightly.
