Crêpes aux porc et pommes, cuit dans une sauce au fromage.

A great use-up recipe for roast pork

Preparation time: 1hr

Difficulty: Medium - some experience needed
Serves: 4


4oz Plain Flour
2 Eggs
1/2 pt Milk

Diced roast Pork

2oz Butter
2 tblsp Plain Flour
1/2 pint Milk
2 handfulls Mature Cheddar, grated


* Beat the eggs into the flour, stir in the milk, a little at a time, until you have a smooth batter the consistency of single cream.
* Heat a little butter in a small frying pan, preferably one only used for pancakes/omelette's. When it's sizzling, use a brush to spread it evenly around the pan. (top this butter layer up between pancakes)
* Ladle a little of the batter into the pan and slowly swirl it around, so it spreads evenly and rises up the edge of the frying pan
* When the pancake comes loose, flip it over to cook the other side.

* Use these pancakes to make parcels of Pork & Applesauce and place them in a large ovenproof dish

* Heat the Butter in a pan, add the flour and stir into a paste.
* Add the milk, a little at a time
* Heat until thick & creamy (stirring continuously)

This can also be done in a microwave:
* Melt the butter in a large bowl/jug
* Stir in the flour to make a paste
* Add the milk, a little at a time
* Heat on full power for 1 minute, whisk sauce.
* Heat for another minute, whisk etc...etc..

* Stir the cheese into the sauce and pour over your pancake-parcels
* Bake at 160C for 30-40mins, or until sauce is bubbling.
