Gram Nivie's Sinigang

1 lb. Fish -
Salmon, Lingcod, or Snapper (Filipino style: use the head and tips, otherwise use fillet)
1/8 cup olive oil
5 cloves garlic, chopped fine
1 medium white onion, chopped fine
1 anahiem chile, split seeded and chopped course
1 bunch greens (mustard, chard, or collards)

fish sauce + or - 1/4 cup
coco or palm vinegar 1/4 to taste
1 tablespoon tamarind paste
salt and pepper


In a deep pot
Saute fish parts in the oil with salt, pepper, chiles, onions and garlic. Set fish aside
Add 6 cups water + tamarind + fish sauce + vinegar
bring up to nearly boiling and simmer for 20 min. add more fish sauce and vinegar to taste if needed.
Add fish and greens; cook to your liking and serve.

serve with rice
