Spinach and Feta Stuffed Chicken

Chicken stuffed with feta cheese, red pepper, spinach, and eggs

8oz - Red pepper (diced)
2ea - Large Eggs
12oz - Cooked spinach
4oz - Grated parmesan cheese
8oz - Feta cheese
3ea - Large boneless, skinless chicken breast
1ea - Large can of herb and garlic spaghetti sauce
3ea - Large cloves of garlic (minced)


1 - Preheat the oven to 350 degrees
2 - In large mixing bowl, combine eggs, red pepper, feta cheese, garlic, and spinach
3 - Cut chicken down the long side to form a pocket in the middle
4 - Evenly distribute stuffing between the three breasts, and secure them closed with toothpicks
5 - Pour 4oz of spaghetti sauce in the bottom of a 8x8 pyrex baking dish
6 - Place the three breasts in the bottom of the pan
7 - Completely cover the chicken with the remainder of the spaghetti sauce and sprinkle the parmesan cheese on top
8 - Cover with tin foil and Bake at 350 degrees for 40 minutes
9 - Remove and uncover
10 - Cook uncovered for another 20 minutes
11 - Serve hot (145-155 degrees)
