Preparation time: 20min
Cooking time: 50min

Serves: 6

8 slices bacon
1 cup shredded Swiss cheese or Gruyère
1/3 cup finely chopped onion
4 large eggs
2 cups liquid fresh cream
1/4 teaspoon salt
Sprinkle of ground cayene pepper
1 or 2 Savory Flat Pastry Sheets (you can purchase these from the frozen section at your supermarket - saves time making your own)
9 inche quiche dish (or any pie dish)

Heat your oven to 325F
Thaw the two flat pastry sheets
Chop up the bacon and onions into little cubes
In a dish mix the eggs, cream, pepper, salt and cheese together
Now that the pastry is thawed, line your baking dish with this pastry - pressing firmly on the sides & bottom of the quiche dish
Sprinkle the onion & bacon onto the pastry
Pour in the egg mixture in
Bake for 50min or until a knife inserted in center comes out clean.
Let stand 10 minutes before serving
Serve with fresh baby rocket salad, balsamic dressing and chutney.

This is a wonderful simple dish to whip up with your pantry essentials when those unexpected guests pop around! You can always substitute bacon with smoked salmon, tuna, chicken, spinach etc.
