Turkey Meatballs

A healthier twist on an Italian classic, great with whole wheat pasta.

Serves: 4 to 6


1/4 cup plain dried bread crumbs
2 tablespoons whole skim
2 lightly beaten eggs
3/4 cup grated Romano
1 pound ground turkey
Salt and pepper
1/4 cup extra virgin olive oil
4 cups tomato sauce (healthy choice makes some awesome sauces)


To prepare your meatballs:
In a large bowl add bread crumbs and milk, mix well. Next and your eggs, salt, pepper and Romano cheese and again mix well. Finally add turkey and mix gently with your other ingredients, be careful not to overwork the meat as you shape it into golf size balls.

To Cook:
In a large skillet heat the oil over medium high heat. When almost smoking, add meatballs and allow them to brown for about 3 minutes. Using a spoon and being very careful not to damage the surface of the skillet, lift and turn the meatballs continuing to cook in this fashion until all sides are golden brown. Once cooked add tomato sauce to the skillet and bring to a boil, once the sauce is bubbling lower the heat, cover if possible and allow meatballs to simmer for no less than 5 minutes (longer times will help keep the meat tender and allow the flavors to mix).

Serve with your favorite pasta and enjoy!
