Grandma's Zucchini Bread

Very easy recipe for left-over zucchini

Preparation time: 20 min.
Cooking time: 1 hr.


Dietary guidance: v 


-3 eggs
-1 c. oil
-1 ½ c. sugar
-2 tsp. vanilla
-2 c. grated zucchini
-1 c. canned pineapple (DO NOT drain!)
-3 c. flour
-2 tsp. baking soda
-½ tsp. baking powder
-1 tsp. salt
-1½ tsp. cinnamon
-1 tsp. nutmeg

-1 c. nuts
-1 c. raisins


Preheat oven to 350°
Grease a 9x5 in. meatloaf pan

Beat eggs, oil, sugar, and vanilla until thick and foamy. Add zucchini and canned fruit.
Combine dry ingredients in a seperate bowl; add to the zucchini mixture.
Pour in pan.

Bake for 1 hour.
