Tomato and Red Lentil Soup

So I copied this out of some magazine (Men's Style I think) when I got a haircut the other day. It's super easy and good. It's a pretty thick soup, and easily multiplied for more people.

1 chopped onion
1 teaspoon smoked paprika (good but don't be afraid to try other flavourings)
half a long red chilli, seeds removed, finely chopped
1 tablespoon tomato paste
400 gm can chopped peeled tomatoes (I've used unpeeled and it's fine and probably healthier)
1/4 cup red lentils


Saute the onion in a pot until brown.

Add all the other ingredients in order, and simmer until the lentils are cooked - probably about 20 minutes. A stir every so often to make sure it isn't catching on the bottom of the pot probably isn't a bad idea.

Easy eh?

According to the recipe you can purée it if you want it smooth - I've never bothered, I like the way it stands up in the bowl....

Good served with some quality bread, and it goes off with some sour cream on top (not if you're vegan obviously), or the original recipe called for yoghurt and chopped coriander.
