Mince Beef Enchiladas

Mince beef and peppers wrapped in tortillas with a tomato sauce and cheese topping

1 small pack of mince beef
1 tin of tomatoes
1/4 pint of beef stock
1 tbsp tomato puree
1 tsp ground coriander
1/4 tsp cinnamon
1 tsp ground cumin
1 clove garlic crushed
1 pepper, chopped
1 small onion, chopped
Salt and pepper
2 tbsp chopped fresh coriander
6 tortilla wraps
100g cheddar cheese, grated


Fry the mince with the onion, cumin, cinnamon, coriander, chopped pepper and garlic until the mince is browned.
Add half the tin of tomatoes, tomato puree and stock and cook until the sauce thickens (about 15 mins). Season to taste with salt and pepper.
Stir in the fresh coriander and remove from the heat.
Divide the mince between the tortillas, roll them up and place in an ovenproof dish.
Pour the remaining half of the tomatoes over the top of the rolled tortillas and sprinkle with the cheese.
Bake in the oven for about 10 mins at Gas Mark 6 or until the cheese has browned.
Serve with salad.
