Bread and Butter Pickles

Serves: 7-8 pints


4 qts cucumbers, sliced
8 white onions, peeled and sliced
1/2 c pickling salt
5 c sugar
2 qts cracked ice
1 1/2 tsp tumeric
1 tsp celery seeds
2 T mustard seeds
5 c cider vinegar


Mix cucumbers and onions with salt and ice. Let stand covered with a weighted lid for 3 hours. Drain thoroughly.

Put vegetables into a large kettle. Add sugar, spices, and vinegar. Bring almost to a boil. Stir often with a wooden spoon. Do not let mixture boil.

Pack into clean, hot jars and seal.
