Serves: 5 pints
3 lbs 4" cucumbers
5 medium onions
1 Tbs mustard seed
1 qt cider vinegar
1 c sugar
2 Tbs pickling salt
wash cucumbers. Quarter them lengthwise. Soak in ice water for 2 hours.
Slice onions and pack into the bottom of 5 pint jars. Pack cucumbers lengthwise in jars.
Combine mustard seed, vinegar, sugar, and salt. Bring to a boil and continue to boil for 1 minute. Fill jars to overflowing and seal.
