Difficulty: Medium - experience needed
4 c all purpose flour (not self rising)
1 t baking powder
1/2 t salt
1 t sugar
1/2 c lard
1/3 c milk
1/3 c water
Sift together dry ingredients. Knead in the lard until consistency is coarse and mealy.
Combine the milk and water. Add just enough of the liquid to the dough to form a stiff dough.
Knead the dough well and then turn it out onto a floured board.
Beat and turn the dough for about 30 minutes. The dough should pop and feel both smooth and elastic.
Pull off small chunks and shape into smooth balls by hand. Place on a lightly greased cookie sheet. Prick each biscuit with a fork 3-4 times.
Bake in a preheated oven at 400 for about 20 minutes. The biscuits are done when they turn light, golden brown.
