Ingredients

1 cup bulgar [cracked] wheat,
1.5 cups boiling water
¼ cup lemon juice
¼ cup olive oil
2 cloves garlic, minced
1 tsp salt
Freshly ground black pepper
4 spring onions, finely chopped
1 cup flat-leaf parsley, finely chopped
15 mint leaves, chopped
2 medium tomatoes, diced

Method

1. Put the bulgar wheat in a bowl, add the boiling water. Leave to soak for 20 minutes

2. Add the lemon juice, olive oil, garlic, salt and pepper. Mix well, cover and refrigerate for at least 60 minutes

3. 30 minutes before serving, mix in the remaining ingredients
