Crock pot Bean Stew

3/4 lb sweet italian sausage, casings removed
10 c chicken broth
1/2 tsp black pepper
2 medium carrots, peeled and chopped
1 stalk celery, chopped
4 oz dried pinto beans
4 oz dried navy beans
4 oz dried kidney beans
6 sun dried tomatoes packed in oil, drained and sliced thin
grated parmesan cheese


Cook the sausage on high in a 6 qt crock pot. Stir to scramble the meat and heat until done. Drain off the extra oil.

Stir in the broth, pepper, carrots, celery, and beans.

Cover and cook on low for 8 hours (or high for 4 hours).

Stir in the tomatoes and heat for an additional hour on high (or until the beans are tender).

Spoon into bowls and top with grated parmesan cheese.
