Crock pot Jambalaya

Ingredients

2 c chicken broth
1 Tbs Creole seasoning
1 lg green pepper, diced
1 lg onion, diced
2 lg stalks celery, diced
1 can (14 oz) diced tomatoes
1 lb kielbasa, diced
3/4 lb boneless, skinless chicken thighs, cut into cubes
1 c uncooked regular long-grain rice
1/2 lb fresh shrimp, shelled and deveined

Method

Stir together the broth, creole seasoning, pepper, onion, celery, tomatoes, kielbasa, chicken, and rice in a 6 qt crock pot. Cover and cook on low for 8 hours (or high for 4 hours).

Add the shrimp. Mix lightly. Cover and cook for an additional 40 minutes or until shrimp is fully cooked through.
