Egg Wraps

1 tsp. extra virgin oil
1 large onion( Chopped into big chunks)
1/2 red pepper(chopped into chunks)
1/2 yellow or orange pepper(chopped into chunks)
6 eggs
1/4 cup 2% milk
1 tsp.salt
1 tsp. garlic powder(please do not use garlic salt)
A few dashes of Mrs.dash herb seasoning
2 cheese slices
4 wholewheat wraps(may use tomato wraps)
Tear away 8 large leafy lettuce leaves
2 tomatoes chopped into small cubes
12 slices of cucumbers (thinly sliced and with skin)
1/2 red pepper diced
1/2 yellow or orange pepper diced
4 tbsp. peppercorn ranch dressing(low-cal)


Pre-chop all your vegetables and place them in bowls. Recommend you cut the thin slices of cucumbers in half as not to rip wrap.

Now then lets get started making the eggs. Heat your element on high and when coils are red turn it down to 7 or med-high. Place skillet on and pour in the virgin oil. swirl around pan. Place the onions and peppers into the pan and sautee. When they are transparent then you can add the eggs and seasoning.

While the onions are going, take a bowl and crack the eggs into it. Take the 1/4 cup milk and pour into eggs. Beat it with a fork till it's well beaten. Pour it over the onions and peppers into the skillet. Now turn down the element to medium. Add your seasoning. When the egg holds together but its still moist looking, flip it onto the otherside and turn it to minimum. Add a little more Mrs.Dashes if desired.

Take the 2 slices of cheese and rip it, placing on all sides of egg on skillet. Cover skillet. This is to hold the heat while cheese melts. Check after 5 minutes. Turn off remove from heat. Prepare wrap on platter.

Add the 2 lettuce leaves on each wrap nicely spread out. Now add your peppercorn ranch dressing. Spread all over leaf. Add tomatoes,peppers, and cucumbers but only a few near the top half.

Take your spatula and cut the eggs into 4 sections. place one on each wrap. Make sure the eggs are thoroughly cooled or it will fall apart. You can always microwave it later once the wraps rolled and holding.

Roll the first part tightly over filling and tuck in ends while rolling. Cut in half and serve with canned pears on a leaf of lettuce and mango,pineapple,orange Doles unsweetened juice.

This will make 2 wraps for 2 people.
